If you love Mexican food like I do, you will drool like a Bernese Mountain Dog over this dressing. When you serve it to friends and family, they will think you are a culinary genius.
Your salad dressing says much about you. I grew up on the bottle. Not THAT bottle silly, the bottled salad dressings. Honestly, I will never forget the first time I went to my sister-in-laws house for a meal. My husband was born in Peru, moved to South Africa, then to Connecticut. His Dad is Italian, his mom is Greek. His first language is Spanish. I know, NONE of that adds up. My point is he did not grow up with bottled salad dressing, like those of us who grew up in good ole’ food processed America.
So, when I sat down to eat at my sister-in-laws house, she served a salad with homemade dressing. The salad in and of itself was simple. It was a variety of mixed greens, not your usual iceberg or romaine lettuce. And she topped it with a basic balsamic vinaigrette. One bite, and my taste buds danced, seriously, that delicious moment was a new beginning for me and salad. I immediately broke up with the boring lettuce, cucumber, tomato and bottled low-fat dressing, and replaced it with something far more interesting and desirable.
Rule #1: You are FAR too good for bottled salad dressing.
This is the easiest way to transform your salad experience. If you get that right, your salad will be delectable and unforgettable. This is where so many people go wrong, and I will note that so many restaurants get it wrong too.
You must make your own salad dressing for pleasure, for variety, and for health reasons. First rule of thumb, watch where your oil comes from. For instance Canola Oil is made up of soy. Soy is the second largest genetically modified crop in the U.S. GMO crops are subsidized. That means it’s cheap, easy to produce, and they will put that shit in EVERYTHING. You think I am kidding?
Well corn is the number one GMO crop in America. They even put corn in your gasoline. Yep, ethanol is a corn derivative.
I rest my case.
So, you need good quality oils. I buy Organic Olive Oil and Organic, virgin/unrefined Coconut Oil. How do you know if your oil is the best quality? Easy, peasy. Take some of it, and put it in the fridge. If is solidifies, it is good. If it doesn’t, it probably comes from the dark, dismal, and chemical apocalyptic world of genetically modified organisms.
Like I said, I love high quality Mexican food. A favorite salad of mine consists of mixed greens, lots of cilantro, black beans, organic corn, tomato, jicama, red onion, roasted pepitas and avocado (you can add cold quinoa to make it even heartier). When I top that with this dressing, I have a masterpiece!
Chipotle Honey Vinaigrette
6 Tablespoons Red Wine Vinegar
1/4 cup honey (I have used Maple Syrup too)
3/4 cup Olive Oil
1/2 Teaspoon dried oregano
1/2 teas Salt (I only use Himalayan or Celtic Sea Salt-these are filled with minerals your body needs)
1/2 teas ground pepper
2 Chipotle peppers in adobo sauce (you get these in small cans at market in Mexican food section)
2 small garlic cloves minced
Put all ingredients in good blender and mix until emulsified.
